Sunset Salsa

Serve with tortilla chips or whole grain crackers.

Makes about 2 cups.

Ingredients

  • 1 red or yellow bell pepper, seeded and cut into
  • ¼ inch pieces 1 cup cherry tomatoes, cut into quarters
  • 2 tablespoons minced red onion
  • ½ jalapeño, seeded and minced
  • ¼ teaspoon chopped garlic
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • Tiny pinch of black pepper
  • 1 tablespoon minced cilantro

Instructions

  1. Place all ingredients in a bowl and stir only until well combined.
